Let me put it another way. Breakfast vs. dinner? Eggs and pancakes are cheap. Dinner steaks, fish and booze are pricey. Mornings have more volume and tables don’t turn as fast at night. If the food isn’t up to par or drinks aren’t made right, the gamble on the night shift leaves you hanging.
When it comes to tipping, I like to triple the tip during the morning shift. The work is more and the food is cheap. No reason servers should make less for more work.
